Pasta with Creamy Basil Sauce
6 oz radiatore or rigatoni 1 clove garlic, peeled 1 1/4 c lightly packed fresh basil leaves 3/4 c low fat cottage cheese 1/4 t salt 1/8 t fresh ground pepper 1 medium tomato chopped 1 oz Gorgonzola or blue cheese (optional) 2 T pine nuts (optional)
Bring 3 qts water to a boil. Cook the noodles to the package directions.
Meanwhile, place the garlic ina food processor and chop. Add basil and cottage cheese, process until smooth. Remove the cover and stir in salt and papper.
Drain pasta, return to the hot pan.
Stir in basil, cottage cheese sauce. Transfer to a warm serving dish, top with chopped tomato. Sprinkle with cheese and pine nuts if desired.
Serve immediately.
