This is really good! I made it tonight!
1 can (10 3/4 oz) Cream of Chicken Soup (Regular or 98% fat free) 1 1/3 c water 3/4 c uncooked regular long grain white rice 1/2 t onion powder 1/4 t ground black pepper 2 c frozen mixed vegetables 4 skinless, boneless chicken breast halves 1/2 c shredded Cheddar cheese
Stir soup, water, rice, onion powder, black pepper and veggies in 11x8" (2 qt) shallow baking dish.
Top with chicken. Season chicken as desired. Cover.
Bake @ 375 F for 50 minutes or until chicken and rice are done. Top with cheese and let stand for 10 minutes.
Stir the rice before serving.
You can also substitute the veggies for broccoli - use 1/4 c Parmesan instead of cheddar, (use 2 t in the rice mixture and the rest to top the chicken) for an alfredo like take on it.
I tried the original recipe - it was really good!
